When the weather cools down or you need a comforting meal, nothing hits the spot like a warm bowl of homemade potato soup. This recipe takes things up a notch by adding hearty bratwurst and tender peas, creating a dish that’s as filling as it is flavorful!
I’m a big fan of soup. Winter was always my favorite time to whip up a big pot of soup. Since moving to Florida, I take advantage of 75°F or below days to throw on a scarf, and my apron, and start cooking!
This potato soup recipe is perfect for family dinners, meal prepping, or impressing guests!
The recipe makes 12 main dish servings, so there is plenty for seconds!

- 1 stick of butter
- 1 large sweet onion, chopped
- 1 1/2 cups shredded carrots
- 2 cups of whole milk
- 1 cup of heaving whipping cream
- 6 tablespoons of flour
- 2 – 12 ounce packages of pre-cooked bratwurst
- 1 package (12 ounces) frozen peas
- 3 pounds yellow potatoes, sliced (or about 8 medium potatoes)
- 2 containers (32 ounces each) chicken broth
- 5-6 dashes of Tabasco sauce
Homemade Potato Soup Recipe Instructions
Step 1: Cook the Base
In a large stock pot, melt the butter over medium heat. Add the chopped onions and shredded carrots. Cook, stirring occasionally, until the onions are tender.

Step 2: Add the Potatoes
Add the sliced potatoes and the chicken broth to the pot.

Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 20 minutes or until the potatoes are tender.
Step 3: Mash the Potatoes

Use a potato masher or a fork to slightly mash the potatoes in the pot. This step creates a creamy texture for the potato soup, while still leaving some potato chunks for texture and heartiness.
Step 4: Thicken the Potato Soup
(It looks like less because I had to move it into a bigger pot because I didn’t start with one big enough).

In a separate bowl, whisk together the flour, heavy whipping cream, and milk until smooth.
Gradually stir this mixture into the pot, ensuring everything is well combined.
Step 5: Add the Final Ingredients
Stir in the sliced bratwurst, frozen peas, and 5 dashes of Tabasco sauce.

*Don’t worry! The few dashes of Tabasco do not make this soup spicy, it just adds another layer of flavor but not heat.
Cook and stir the potato soup until it starts to bubble. Once bubbling, cook for one more minute, while stirring constantly to ensure everything is heated through.
Serve and Enjoy
